When people have busy schedules, it is difficult to make time to cook. Most people tend to go to a restaurant or a convenience store to eat their dinner. Going out to eat all the time can get expensive, so I like to buy groceries for the week and cook meals at home. My favourite dish that I like to make that is fast and easy is kamameshi. It is a famous one pot dish that requires very little time to prepare. Here is a quick way to make it.
Serves 3 to 4 people:
1 medium carrot
½ burdock root stick
3 cups of rice washed
3 ½ cups of dashi
½ cup light soy sauce
¼ cup mirin
1 tbsp sesame oil
In a pot
Saute the burdock root and carrot with sesame oil and 1 tbsp canola oil for 2-3 min
Add light soy, mirin, and dashi and rice to the pot
Bring to a boil and simmer for 30 min with a lid
Serve hot

Put everything in the rice cooker and set to mixed rice setting.
